Ever since we returned to the USA after being infected with Covid while in Tunisia, I have fixed my wife’s breakfast. They say practice makes perfect and it would appear I have reached that point, at least as far as she is concerned. A near perfect baby spinach, portabella mushroom and Oaxaca cheese omelet with a sweet red pepper and a rice cake with peanut butter have her off to a great start everyday. Fifty-six years ago tonight I met her for the first time on a blind date and I cannot imagine my Life without her.
